Some chef friends of Paul suggested that he come up with a new design and then Paul interviewed over 100 New York chefs using a Henckels and a Wusthof  knife as the starting point.  The chefs were asked what they would change or improve based on the current products on the market at that time.  The result was a set of design criteria that Paul used to formulate his new design.  The chefs said they wanted a more balanced, heftier knife, with a sharp heel and smooth corners.  They wanted a more attractive knife to match the art they put into their signature dishes.  Paul developed the “triple tang” concept which allowed this weight and balance to enhance the feel and performance of the design.  The new design incorporated a larger bolster for more comfort.  A bolster is the large metal area between the blade and the handle.  Bolsters are used only on forged knives.Paul found a German steel manufacturer in Solingen, Germany and contracted with a the best cutlery factory in Asia to produce these knives.  Paul actually inspects each one for defects and often rejects up to 30% ensuring the ultimate in customer satisfaction.  In fact, Paul insists on dealing with each phone customer himself to ensure complete buyer satisfaction.
